- Dressing:
- 1 teaspoon chopped fresh ginger
- 1 teaspoon reduced-sodium soy sauce
- 3 teaspoons sesame oil
- 1 1/2 cups chopped romaine lettuce
- 1/2 cup thinly sliced baby bok choy
- 1/2 cup shiitake mushrooms, thinly sliced
- 1 small sweet white onion, thinly sliced
- 1/2 cup red bell pepper, chopped
- 1/4 cup broccoli sprouts
- 1/4 cup wasabi peas
- In a small bowl, combine the ginger, soy sauce, and sesame oil. For best effect, mix dressing then microwave for 30 seconds and let cool.
- Toss remaining ingredients together in a large bowl. Drizzle with dressing. Serve immediately.
