Golden Potatoes Recipe

  • 2 (12 ounce) packages frozen cooked winter squash
  • 8 cups russet potatoes, peeled, cut in 1-inch cubes
  • 1/2 cup butter, softened
  • 1/2 cup sour cream
  • 1 tablespoon Spice Islands® Garlic Powder
  • 1 1/2 teaspoons Spice Islands® Italian seasoning
  • 1/2 teaspoon Spice Islands® White Pepper
  • 2 teaspoons Spice Islands® Onion Salt
  • 1 cup Parmesan cheese, freshly grated
  1. Cook squash according to package directions.
  2. Place potatoes in large pan and cover with water. Cook until tender, about 15 minutes; drain.
  3. Combine squash, potatoes, butter and sour cream in a mixing bowl. Beat until smooth. Add remaining ingredients and beat another 1 to 2 minutes to thoroughly mix. Serve hot.
