- 1 tbsp olive oil
- ½ onion, chopped
- 1 garlic, clove
- ½ tsp red wine vinegar
- ½ tsp caster sugar
- 150ml/4½fl oz passata
- small bunch basil, chopped
- 125g/4oz ready-made gnocchi, cooked according to packet instructions
- salt and freshly ground black pepper
- Heat the oil in a frying pan over a medium heat. Add the onion and garlic and fry until softened.
- Add the vinegar and sugar and stir until the sugar has dissolved.
- Add the passata, bring to the boil, then reduce the heat to simmer for 5-6 minutes.
- Add the basil and season, to taste, with salt and freshly ground black pepper.
- Add the gnocchi and stir well to coat.
- To serve, place the gnocchi and sauce into a bowl and serve immediately.
