- 2 cups thinly sliced shallots or onions
- 1 cup dry sherry
- 2 tablespoons Lucerne Sweet Cream Butter
- 1 1/2 cups Lucerne Light Sour Cream
- 1 cup chicken broth
- 1 1/4 pounds refrigerated gnocchi
- 2 cups skinned, shredded Safeway SELECT Whole Roasted Chicken
- 1/3 cup chopped parsley
- Fresh-grated nutmeg
- Salt
- In a 5- to 6-quart pan over medium-high heat, combine shallots, sherry, and butter. Stir until shallots are limp and sherry is almost completely evaporated, about 10 minutes.
- Add sour cream and chicken broth to pan; whisk until smooth. Add gnocchi, chicken, and parsley. Stir until heated through, about 5 minutes.
- Spoon into bowls and season to taste with nutmeg and salt.
