Gnocchi with Chicken and Sherried Shallots Recipe

  • 2 cups thinly sliced shallots or onions
  • 1 cup dry sherry
  • 2 tablespoons Lucerne Sweet Cream Butter
  • 1 1/2 cups Lucerne Light Sour Cream
  • 1 cup chicken broth
  • 1 1/4 pounds refrigerated gnocchi
  • 2 cups skinned, shredded Safeway SELECT Whole Roasted Chicken
  • 1/3 cup chopped parsley
  • Fresh-grated nutmeg
  • Salt
  1. In a 5- to 6-quart pan over medium-high heat, combine shallots, sherry, and butter. Stir until shallots are limp and sherry is almost completely evaporated, about 10 minutes.
  2. Add sour cream and chicken broth to pan; whisk until smooth. Add gnocchi, chicken, and parsley. Stir until heated through, about 5 minutes.
  3. Spoon into bowls and season to taste with nutmeg and salt.
