Glorified Picnic Rice Recipe

  • 2 cups water
  • 1 cup white rice
  • 1/2 cup white sugar
  • 2 tablespoons all-purpose flour
  • 1 (20 ounce) can pineapple chunks, drained, reserving juice
  • 2 eggs, beaten
  • 1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
  • 1 (4 ounce) jar maraschino cherries, drained
  1. Combine water and rice in a 3-quart saucepan. Bring to boil; simmer until water is absorbed and rice is tender, about 15 minutes. Allow to cool.
  2. Mix sugar and flour together in a bowl. Stir sugar mixture, pineapple juice, and beaten eggs together in a saucepan; cook and stir over medium-low heat until the mixture has the consistency of pudding, about 5 minutes. Allow to cool.
  3. Mix rice, pudding, pineapple, whipped topping, and cherries together in a bowl. Refrigerate until chilled, about 1 hour.
