Ginger and broccoli fried rice Recipe

  • 1 tbsp vegetable oil
  • knob butter
  • 55g/2oz broccoli, chopped
  • 1 tsp freshly grated root ginger
  • 85g/3oz basmati rice, cooked and drained
  • 2 tbsp chopped fresh dill
  1. Heat the oil and butter in a pan and gently fry the broccoli and ginger for 3-4 minutes, or until the broccoli is tender. Add the cooked rice and fry for a further 3-4 minutes, then stir in the dill.
  2. Spoon the fried rice onto a plate and serve immediately.
