Garlic Chicken Peruvian Style Recipe

  • 1/2 cup olive oil
  • 3 onions, chopped
  • 6 cloves garlic, chopped
  • 4 rocoto chiles, seeded and chopped
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon ground cumin
  • 1 teaspoon dried basil
  • 2 cups chopped roasted peanuts
  • 1/2 cup grated Parmesan cheese
  • 3 pounds skinless, boneless chicken breast meat – cut into bite-size pieces
  • 3/4 cup plain yogurt
  • salt and pepper to taste
  1. Heat oil in a large saucepan over medium-low heat. Add onions and garlic and cook until softened, about 8 minutes.
  2. Stir in chiles, cinnamon, cumin, basil, peanuts, cheese, and chicken. Mix well, cover and simmer over low heat until chicken is cooked through and seasonings have blended, 25 to 30 minutes.
  3. Just before serving, stir in yogurt and cook for an additional 3 minutes.
