- 100g/3½oz gammon steak
- Âź onion, sliced
- 150g/5oz fresh peas
- 1 orange, segmented
- 2 tbsp chopped fresh mint
- 1 tbsp oil
- Place the gammon into a saucepan. Cover with water and bring to the boil. Reduce the heat and simmer for ten minutes, or until the gammon is completely cooked through.
- In a bowl, mix together the onion, peas, orange segments, mint and oil.
- Place the salad on a serving plate. Cut the gammon into strips and scatter over the salad.
