Gammon, pea and orange salad Recipe

  • 100g/3½oz gammon steak
  • Âź onion, sliced
  • 150g/5oz fresh peas
  • 1 orange, segmented
  • 2 tbsp chopped fresh mint
  • 1 tbsp oil
  1. Place the gammon into a saucepan. Cover with water and bring to the boil. Reduce the heat and simmer for ten minutes, or until the gammon is completely cooked through.
  2. In a bowl, mix together the onion, peas, orange segments, mint and oil.
  3. Place the salad on a serving plate. Cut the gammon into strips and scatter over the salad.
