Fruity Maple Couscous Recipe

  • 1 cup low-fat (1%) milk
  • 2 tablespoons maple syrup
  • 2 tablespoons chopped dried apricots, or raisins
  • 1/2 cup couscous
  • 2 tablespoons sunflower seeds
  1. Ahead of Time: Combine milk, syrup, and apricots or raisins in a microwave-safe bowl. Cover and refrigerate until morning. Measure the couscous; cover and set aside.
  2. In the Morning: Microwave milk mixture on HIGH just until it comes to a boil, 2 to 3 minutes. Stir in couscous. Cover with vented plastic wrap. Microwave on HIGH for 1 minute. Let stand until liquid has been absorbed, about 5 minutes. Fluff couscous with a fork and sprinkle with sunflower seeds. Serve immediately.
