Fruited Spring Salad with Chicken Recipe

  • 1 bunch fresh rapini or broccoli raab
  • 6 cups fresh baby spinach leaves, washed and thoroughly dried
  • 4 cups sliced strawberries (about 1 pound)
  • 2 fresh ripe peeled peaches or unpeeled nectarines, sliced
  • 2 fresh ripe plums, sliced
  • 1 red onion, thinly sliced
  • 2 garlic cloves, minced
  • 2 teaspoons Morton® Coarse Kosher Salt
  • 1 teaspoon sugar
  • 1/2 cup prepared poppyseed dressing
  • 1 pound grilled chicken tenders
  1. Cut the rapini flowers and leaves away from the large central stems. Coarsely chop the flowers and leaves.
  2. In large bowl, combine the rapini and spinach with strawberries, peaches and plums. Cover and refrigerate at least 30 minutes to chill.
  3. In separate bowl, toss red onion, garlic, Morton(R) Kosher Salt and sugar. Allow to marinate 5 minutes; stir in poppyseed dressing. Cover and refrigerate until needed.
  4. When ready to serve, toss greens/fruit mixture with onion/dressing mixture. Evenly top each salad serving with chicken pieces.
  5. Serve immediately.
