- 1 bunch fresh rapini or broccoli raab
- 6 cups fresh baby spinach leaves, washed and thoroughly dried
- 4 cups sliced strawberries (about 1 pound)
- 2 fresh ripe peeled peaches or unpeeled nectarines, sliced
- 2 fresh ripe plums, sliced
- 1 red onion, thinly sliced
- 2 garlic cloves, minced
- 2 teaspoons Morton® Coarse Kosher Salt
- 1 teaspoon sugar
- 1/2 cup prepared poppyseed dressing
- 1 pound grilled chicken tenders
- Cut the rapini flowers and leaves away from the large central stems. Coarsely chop the flowers and leaves.
- In large bowl, combine the rapini and spinach with strawberries, peaches and plums. Cover and refrigerate at least 30 minutes to chill.
- In separate bowl, toss red onion, garlic, Morton(R) Kosher Salt and sugar. Allow to marinate 5 minutes; stir in poppyseed dressing. Cover and refrigerate until needed.
- When ready to serve, toss greens/fruit mixture with onion/dressing mixture. Evenly top each salad serving with chicken pieces.
- Serve immediately.
