Fruit cocktail trifle Recipe

  • 1 nectarine, stone removed, sliced
  • 3 ginger biscuits
  • 1 tbsp chopped macadamia nuts
  • 1 orange, juice only
  • 50ml/2fl oz double cream
  • 3 tbsp mascarpone cheese
  • 1 lime, zest only
  • 1 tbsp icing sugar
  • 1 tbsp chopped mixed tropical fruit
  1. In a tall dessert glass, arrange half of the nectarine slices, and crumble over half of the ginger biscuits and macadamia nuts. Squeeze over half of the orange juice and repeat the layering process once more.
  2. Whisk the cream, mascarpone, lime zest and icing sugar together in a bowl until smooth and creamy. Spoon the mixture into the glass.
  3. Top with the chopped tropical fruit and serve.
