- 1 medium green pepper, chopped
- 1 cup chopped celery
- 1 cup shredded cabbage
- 3/4 cup chopped unpeeled red apple
- 1/2 cup seedless red grapes, halved
- 1/4 cup reduced-fat mayonnaise
- 1/4 teaspoon salt

- In a bowl, combine the first five ingredients. In a small bowl, combine the mayonnaise and salt. Stir into pepper mixture. Cover and refrigerate for at least 1 hour. Serve on lettuce leaves.
