Friedas Molasses Cookies Recipe

  • 1 cup sugar
  • 1 cup shortening
  • 1 cup light molasses or sorghum
  • 1/3 cup boiling water
  • 1 tablespoon vinegar
  • 5 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  1. In a large bowl, cream sugar and shortening. Add molasses, water and vinegar. Combine flour, baking soda, ginger, cinnamon and salt; beat into creamed mixture. Cover and chill for 3 hours. On a lightly floured surface, roll dough to 1/4-in. thickness. Cut with a 2-1/2-in cutter, drinking glass or decorative cutter dipped in flour. Place on greased baking sheets. Bake at 375 degrees F for 8 minutes or until edges are lightly browned. Do not overbake.
