Fried halloumi with courgette and bean salad Recipe

  • 1 courgette
  • 1 handful red Peppadew peppers
  • 1 handful fresh coriander, chopped
  • 1 handful tinned mixed beans, rinsed and drained
  • juice of ½ lemon
  • 3 tbsp olive oil
  • salt and freshly ground black pepper
  • tsp olive oil
  • 3 slices halloumi cheese
  1. Using a peeler, peel the courgette into thin 'ribbons' for the salad. Place into a bowl.
  2. Add the coriander, mixed beans, lemon juice and olive oil and toss well. Season to taste with salt and freshly ground black pepper.
  3. In a small frying pan with a little oil add the slices of halloumi and cook for 20 seconds on each side.
  4. Serve the courgette and bean salad on a plate and place the fried halloumi on top.
