Fresh pea and mint soup Recipe

  • 1 tbsp olive oil, plus extra to serve
  • 25g/1oz butter
  • ½ onion, finely chopped
  • 1 garlic clove, finely chopped
  • 100g/3½oz fresh peas
  • 200ml/7fl oz vegetable stock
  • 2 tbsp chopped fresh mint
  1. Heat the oil and butter in a frying pan and fry the onion and garlic until softened but not coloured.
  2. Add the peas and stock and bring to a gentle simmer. Cook until the peas are tender, about 5-8 minutes.
  3. Remove from the heat. Stir in the fresh mint and blend until smooth with a hand blender. Serve in a bowl garnished with a drizzle of olive oil.
