Flourless Banana Chocolate Chip Muffins Recipe

  • 2 1/4 cups quick-cooking oats
  • 1 cup mashed bananas
  • 1/2 cup maple syrup
  • 2 tablespoons maple syrup
  • 2 eggs
  • 1/4 cup unsweetened vanilla-flavored almond milk
  • 3 tablespoons coconut oil, melted
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips
  1. Preheat oven to 350 degrees F (175 degrees C). Grease or line 12 muffin cups with paper liners.
  2. Place oats, mashed bananas, 1/2 cup plus 2 tablespoons maple syrup, eggs, almond milk, coconut oil, vanilla extract, baking powder, cinnamon, baking soda, and salt in a blender or food processor; blend or process until batter is smooth. Gently stir chocolate chips into batter using a spoon.
  3. Pour batter into the prepared muffin cups, filling them 3/4 full.
  4. Bake in the preheated oven until light golden brown, about 22 minutes. Cool for 10 to 15 minutes before eating.
