Fine egg custard flan Recipe

  • 3 sheets ready-made filo pastry
  • butter, melted
  • 2 free-range eggs
  • 30ml/1Âźfl oz cream
  • 30ml/1Âźfl oz milk
  • 85g/3oz sugar
  • vanilla essence, few drops
  1. Heat oven to 220C/425F/Gas 7.
  2. Line a crepe pan with filo pastry and butter the pastry. Add another sheet and so on to make a flan case.
  3. Mix the eggs, cream, milk, sugar and vanilla together and pour into the flan case.
  4. Bake in the oven for 5-8 minutes or until golden.
