- 1 tbsp caster sugar
- 15g/½oz butter
- 1 peach, cut into 6 wedges
- 4 sheets ready-made filo pastry
- melted butter, for brushing
- Preheat the oven to 200C/400F/Gas 6.
- Melt the butter and sugar in an ovenproof frying pan over a medium heat.
- Add the peach wedges, cut-side down, and cook for five minutes.
- Brush a sheet of the pastry with the melted butter and screw up into a ball. Repeat with the remaining three sheets of filo and place the pastry balls on top of the peaches.
- Transfer the pan into the oven and bake for 10 minutes, or until the pastry is crisp and golden.
