- 2 figs, stalks removed
- 2 slices prosciutto
- olive oil, for drizzling
- 1 tbsp balsamic vinegar
- salt and freshly ground black pepper
- 2 slices toasted bread, to serve
- Preheat the oven to 180C/350F/Gas 4.
- Using a sharp knife, carefully cut a cross into the top of each fig and squeeze the base of each fig until they open out slightly.
- Stuff each fig with a slice of prosciutto and drizzle with olive oil and balsamic vinegar. Season, to taste, with salt and freshly ground black pepper.
- Place on a baking sheet and roast in the oven for five minutes, or until the figs are warmed through and the prosciutto is crisp.
- To serve, place the figs onto a serving plate and serve with toast.
