- 2 teaspoons orange juice
- 2 teaspoons olive oil
- 1/8 teaspoon black pepper
- 2 tablespoons cilantro, chopped
- 2 cups mixed field greens
- 1/2 cup canned sweet corn, drained
- 1/3 cup grape tomatoes
- 1/3 cup edamame, shelled and cooked
- 1/3 cup precooked chicken breast (such as Louis Rich), chopped
- In a small bowl whisk together orange juice, olive oil, and black pepper. Gently stir in cilantro.
- Toss remaining ingredients together. Drizzle with dressing and serve immediately.
