Fight Fat Salad Recipe

  • 2 teaspoons orange juice
  • 2 teaspoons olive oil
  • 1/8 teaspoon black pepper
  • 2 tablespoons cilantro, chopped
  • 2 cups mixed field greens
  • 1/2 cup canned sweet corn, drained
  • 1/3 cup grape tomatoes
  • 1/3 cup edamame, shelled and cooked
  • 1/3 cup precooked chicken breast (such as Louis Rich), chopped
  1. In a small bowl whisk together orange juice, olive oil, and black pepper. Gently stir in cilantro.
  2. Toss remaining ingredients together. Drizzle with dressing and serve immediately.
