- 1 (5.5 ounce) can vegetable juice cocktail
- 2 tablespoons lime juice
- 1/2 teaspoon hot pepper sauce
- 2 cloves garlic, minced
- 1/2 teaspoon sugar
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 8 ounces rotelle pasta, cooked
- 3 smoked turkey ham, cubed
- 1 (15 ounce) can dark red kidney beans, drained and rinsed
- 8 ounces frozen corn kernels
- 1 cup shredded low-fat Cheddar cheese
- 3 plum tomatoes, chopped
- 3 bunches scallions, finely chopped
- 2 ounces black olives, pitted and finely chopped
- In a large bowl, combine the vegetable juice, lime juice, 1/2 teaspoon (2 ml) hot-pepper sauce, garlic, sugar, cumin, and salt. Whisk to mix.
- Add the pasta, ham, beans, corn, Cheddar, tomatoes, scallions, and olives. Toss to mix. Taste and add up to 1/2 teaspoon (2 ml) more hot-pepper sauce, if desired.
