Fiesta Pasta Salad Recipe

  • 1 (5.5 ounce) can vegetable juice cocktail
  • 2 tablespoons lime juice
  • 1/2 teaspoon hot pepper sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon sugar
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 8 ounces rotelle pasta, cooked
  • 3 smoked turkey ham, cubed
  • 1 (15 ounce) can dark red kidney beans, drained and rinsed
  • 8 ounces frozen corn kernels
  • 1 cup shredded low-fat Cheddar cheese
  • 3 plum tomatoes, chopped
  • 3 bunches scallions, finely chopped
  • 2 ounces black olives, pitted and finely chopped
  1. In a large bowl, combine the vegetable juice, lime juice, 1/2 teaspoon (2 ml) hot-pepper sauce, garlic, sugar, cumin, and salt. Whisk to mix.
  2. Add the pasta, ham, beans, corn, Cheddar, tomatoes, scallions, and olives. Toss to mix. Taste and add up to 1/2 teaspoon (2 ml) more hot-pepper sauce, if desired.
