Fiesta Onions Recipe

  • Marinade:
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 3/4 cup white sugar
  • 6 Spanish onions, thinly sliced
  • Dressing:
  • 3/4 cup mayonnaise
  • 1 tablespoon celery seed
  • salt and ground black pepper to taste
  1. Combine vinegar and water in a large bowl. Whisk sugar into the vinegar mixture until dissolved. Add onion slices and marinate at least 3 hours; drain.
  2. Whisk mayonnaise, celery seed, salt, and pepper together in a separate bowl; add to drained onion slices and fold to coat. Marinate at least 2 hours before serving.
