- 2 tbsp olive oil, plus extra for oiling
- ½ large onion, chopped
- ½ red pepper, chopped
- 1 garlic clove, chopped
- 50g/1¾oz walnuts, shelled, chopped
- 75g/2¾oz canned red kidney beans, rinsed and drained
- 200g/7oz basmati rice, cooked in vegetable stock or according to packet instructions
- salt and freshly ground black pepper
- 1 large bunch fresh chervil, chopped
- Heat the oil in a large frying pan and fry the onion, red pepper and garlic until soft.
- Add the walnuts and kidney beans to the pan and cook for a further 2-3 minutes.
- Add the rice to the pan, warm through and season with salt and freshly ground black pepper.
- Remove the pan from the heat and stir in the chopped chervil.
- Lightly oil a large bowl and pack the rice mixture into the bowl.
- To serve, turn the rice out onto a plate to make a dome shape.
