Festive pilau rice Recipe

  • 2 tbsp olive oil, plus extra for oiling
  • ½ large onion, chopped
  • ½ red pepper, chopped
  • 1 garlic clove, chopped
  • 50g/1¾oz walnuts, shelled, chopped
  • 75g/2¾oz canned red kidney beans, rinsed and drained
  • 200g/7oz basmati rice, cooked in vegetable stock or according to packet instructions
  • salt and freshly ground black pepper
  • 1 large bunch fresh chervil, chopped
  1. Heat the oil in a large frying pan and fry the onion, red pepper and garlic until soft.
  2. Add the walnuts and kidney beans to the pan and cook for a further 2-3 minutes.
  3. Add the rice to the pan, warm through and season with salt and freshly ground black pepper.
  4. Remove the pan from the heat and stir in the chopped chervil.
  5. Lightly oil a large bowl and pack the rice mixture into the bowl.
  6. To serve, turn the rice out onto a plate to make a dome shape.
