- 2 1/3 cups water
- 1 (6 ounce) package UNCLE BEN'S® Long Grain & Wild Rice Original Recipe
- 4 cloves garlic
- 2 tablespoons butter or margarine
- 1/2 cup red onion
- 1 (6 ounce) jar marinated artichoke hearts
- 4 lamb chops
- 1/2 cup Mediterranean marinade
- 1/4 red pepper
- 1/4 yellow pepper
- 1/4 green pepper
- Pour marinade over lamb chops and marinate for 20 minutes.
- In a skillet, combine rice, seasoning packet and all remaining ingredients.
- Cook according to package directions.
- Grill or broil the lamb chops as desired and serve over rice.
- Garnish with rosemary or mint sprigs.
