Festive Mediterranean Lamb Recipe

  • 2 1/3 cups water
  • 1 (6 ounce) package UNCLE BEN'S® Long Grain & Wild Rice Original Recipe
  • 4 cloves garlic
  • 2 tablespoons butter or margarine
  • 1/2 cup red onion
  • 1 (6 ounce) jar marinated artichoke hearts
  • 4 lamb chops
  • 1/2 cup Mediterranean marinade
  • 1/4 red pepper
  • 1/4 yellow pepper
  • 1/4 green pepper
  1. Pour marinade over lamb chops and marinate for 20 minutes.
  2. In a skillet, combine rice, seasoning packet and all remaining ingredients.
  3. Cook according to package directions.
  4. Grill or broil the lamb chops as desired and serve over rice.
  5. Garnish with rosemary or mint sprigs.
