- 1/2 cup cake flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 2 large egg whites
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 1 1/2 teaspoons vanilla extract
- 2 tablespoons chopped pistachios or walnuts
- Preheat oven to 350 degrees F. Coat 8×8-inch baking pan with cooking spray.
- In medium bowl, sift together flour, cocoa, baking powder, and salt. In large bowl, whisk egg and egg whites until frothy. Whisk in sugar, oil, and vanilla extract until smooth.
- Gradually fold in flour mixture until just blended. Pour into prepared pan. Sprinkle with pistachios.
- Bake 20 to 25 minutes or until wooden pick inserted in center comes out with moist crumbs. Cool in pan on rack and then cut into 12 squares.
