eDiets Slow Cooker Three Bean Stew Recipe

  • 1 medium carrot
  • 2 teaspoons olive oil
  • 1/4 cup chopped onion
  • 1/3 cup canned black beans, rinsed and drained
  • 1/3 cup canned white beans, rinsed and drained
  • 1/3 cup canned kidney beans, rinsed and drained
  • 1/2 cup canned crushed tomatoes, low sodium
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 ounce vegetarian dairy-free low fat or fat-free mozzarella cheese
  1. Rinse and dice carrot. In a slow cooker add beans, carrots, tomatoes, garlic powder and black pepper and cook for 3 to 4 hours. Heat olive oil in non stick skillet to medium high heat and saute onions for 2 to 3 minutes until translucent and add to cooker. Top with cheese and serve.
