- 1 medium carrot
- 2 teaspoons olive oil
- 1/4 cup chopped onion
- 1/3 cup canned black beans, rinsed and drained
- 1/3 cup canned white beans, rinsed and drained
- 1/3 cup canned kidney beans, rinsed and drained
- 1/2 cup canned crushed tomatoes, low sodium
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 ounce vegetarian dairy-free low fat or fat-free mozzarella cheese
- Rinse and dice carrot. In a slow cooker add beans, carrots, tomatoes, garlic powder and black pepper and cook for 3 to 4 hours. Heat olive oil in non stick skillet to medium high heat and saute onions for 2 to 3 minutes until translucent and add to cooker. Top with cheese and serve.
