eDiets Low Carb Mediterranean Broccoli-Tomato Salad Recipe

  • 2 cups fresh broccoli
  • 6 cherry tomatoes
  • 1 1/3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  1. Rinse and chop broccoli into bite sized pieces; steam or microwave for about 5-6 minutes until crisp tender; let cool. Rinse and cut tomatoes in half. Combine broccoli and tomatoes in a bowl and toss olive oil and vinegar. Serve.
