- 1 cup cream of mushroom soup
- 1 (10.75 ounce) can milk
- 1 cup grated Cheddar cheese
- 1 cup broccoli florets
- 1/2 cup chopped fresh mushrooms
- 1 cup cauliflower florets
- 1 1/2 cups uncooked instant rice
- Mix together soup and milk in a microwave safe casserole dish. Add the cheese, broccoli, mushrooms, and cauliflower. Stir in the rice and distribute ingredients evenly in the dish.
- Cover dish with plastic wrap. Microwave on HIGH for 10 minutes. Peel back plastic wrap and stir; cover again. Microwave on HIGH until rice is cooked, about 5 minutes. Let dish stand a few minutes to allow sauce to thicken.
