Easy Microwave Veggie Rice Recipe

  • 1 cup cream of mushroom soup
  • 1 (10.75 ounce) can milk
  • 1 cup grated Cheddar cheese
  • 1 cup broccoli florets
  • 1/2 cup chopped fresh mushrooms
  • 1 cup cauliflower florets
  • 1 1/2 cups uncooked instant rice
  1. Mix together soup and milk in a microwave safe casserole dish. Add the cheese, broccoli, mushrooms, and cauliflower. Stir in the rice and distribute ingredients evenly in the dish.
  2. Cover dish with plastic wrap. Microwave on HIGH for 10 minutes. Peel back plastic wrap and stir; cover again. Microwave on HIGH until rice is cooked, about 5 minutes. Let dish stand a few minutes to allow sauce to thicken.
