Easy Blueberry Shortbread Recipe

  • 1 1/3 cups sugar
  • 3/4 cup butter, softened
  • 2 eggs
  • 2 cups sifted flour
  • 1/2 teaspoon lemon rind
  • 1 (21 ounce) can LUCKY LEAF® Premium Blueberry Fruit Filling
  • Icing:
  • 2 cups confectioners' sugar
  • 2 tablespoons water
  • 1 1/2 teaspoons lemon juice
  1. Cream butter and sugar. Add eggs singly and beat until light and fluffy. Add flour and lemon rind. Put 1/2 dough in well-greased 9×13 inch pan and cover with LUCKY LEAF Blueberry Pie Filling. Drop remaining dough over top. Bake at 325 degrees for 45 minutes or until golden brown. Cool, top with icing.
  2. Icing: In a bowl, combine the confectioners' sugar, water and lemon juice; stir until combined and smooth (mixture will be thick). With a fork or small spatula, drizzle on top of cooled shortbread.
