- Cake:
- 1 (18.25 ounce) package pudding-added yellow cake mix
- 1/4 cup vegetable oil
- 3 eggs
- 1 teaspoon ground nutmeg
- 1 cup eggnog
- EggNog Glaze:
- 2 cups powdered sugar
- 2 tablespoons margarine or butter, softened
- 1 teaspoon vanilla
- 3 tablespoons eggnog
- To make the Cake: Preheat oven to 350 degrees F.
- Spray sides and bottom of a bundt pan with vegetable cooking spray, or grease with butter or margarine.
- Combine dry cake mix with oil, eggs, and nutmeg.
- Mix in 1 cup of LACTAID(R) EggNog in place of water (regardless of the amount of water called for on the package).
- Bake for 35 minutes. Cool.
- To make EggNog Glaze: Combine sugar with margarine or butter in a medium bowl; add vanilla. Add enough LACTAID(R) EggNog for desired consistency.
