Curry With Apples and Dried Cranberries Recipe

  • 1 tablespoon vegetable oil
  • 1 cup chopped onions
  • 4 cloves garlic, minced
  • 1 large tart green apple, chopped into 1-inch pieces
  • 1 pound chicken, turkey or pork cut for kabobs
  • 1/4 teaspoon salt and pepper
  • 1 tablespoon curry powder
  • 3 tablespoons flour
  • 1 (14 ounce) can chicken broth
  • 1/3 cup dried cranberries
  • For serving (optional)
  • cooked rice or couscous
  • chutney
  • chopped peanuts
  1. In a large skillet over moderately high heat, heat oil until hot. Add onion, garlic and apples and saute 3 minutes.
  2. Stir in meat, salt, pepper and curry powder. Saute for 2 minutes or until lightly browned. Stir in flour, cooking until absorbed. Stir in chicken broth and cranberries.
  3. Reduce heat to medium-low and simmer for 5 to 6 minutes or until thickened slightly and meat is cooked through.
  4. Serve with rice or couscous, chutney and peanuts, if desired.
