- Dressing:
- 2 tablespoons extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons white wine vinegar
- 1 tablespoon minced shallot
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Salad:
- 3 cucumbers, peeled and chopped
- 8 cups melon balls (honeydew or various types)
- 1 bunch watercress
- 1/2 cup fresh mint leaves
- 1/2 cup feta cheese
- 1 tablespoon toasted pine nuts
- 1 tablespoon kalamata olives, pitted and quartered lengthwise
- Prepare dressing. Whisk together oil, lemon juice, vinegar, shallot, sugar, salt, and pepper in small bowl.
- Assemble salad. Combine cucumbers, melon, watercress, and mint in large bowl. Toss with dressing, cheese, pine nuts, and olives.
