Cuban Mojo Recipe

  • ¼ cup vegetable oil
  • 1 medium-size onion, sliced paper thin
  • 4 large garlic cloves, thinly sliced
  • 2 scallions, thinly sliced
  • 1 large jalapeno, thinly sliced (leave the seeds in)
  • 1 cup orange juice
  • ½ cup fresh lime juice
  • Salt
  1. In a medium-size saucepan, heat the oil over medium-low heat until shimmering. Add the onion, garlic, scallions, and jalapeño and cook until barely softened, stirring a few times, about 4 minutes.
  2. Add the orange juice and lime juice, season with salt, and simmer for 1 minute. Let cool completely before using.
