Crunchy Orange Muffins Recipe

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/2 cup orange juice
  • 1 tablespoon grated orange peel
  • STREUSEL TOPPING:
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter or margarine, melted
  • 1 teaspoon ground cinnamon
  1. In a large bowl, combine the first seven ingredients. In a small bowl, combine the egg, oil, orange juice and peel; stir into dry ingredients just until moistened. Fill greased muffin cups two-thirds full.
  2. Combine topping ingredients; sprinkle heaping tablespoonfuls on each muffin. Bake at 375 degrees F for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
