Crisp Potato Kugel Recipe

  • 6 medium baking potatoes, peeled
  • 1 large onion, peeled
  • 2 Safeway SELECT Organic Large Eggs
  • 1 teaspoon salt
  • 8 tablespoons tablespoons margarine, melted and divided
  • 2 tablespoons all-purpose flour or matzo meal
  1. Place rack in upper third of oven and preheat to 400 degrees F.
  2. In a food processor with the shredding disk or with a hand grater, grate potatoes and onion. Place in a colander and drain well, squeezing out excess moisture.
  3. In a large bowl, whisk eggs, salt, 6 tablespoons melted margarine, and flour. Stir in potatoes until well combined.
  4. Place remaining melted margarine in a 9×13-inch baking dish. Tilt dish to coat evenly. Pour potato mixture into dish and spread evenly.
  5. Bake uncovered for 15 minutes. Reduce oven temperature to 375 degrees F and continue baking for 45 minutes more or until top is crisp. Cut into squares.
