Creole Rice and Kidney Beans Recipe

  • 1 1/2 cups water
  • 1 cup white rice
  • 1/2 cup coconut milk
  • 1/2 cup canned kidney beans
  • 1 teaspoon dried thyme
  • salt to taste
  • 3 whole cloves
  • 1 small onion
  1. Combine water, rice, coconut milk, kidney beans, thyme, and salt in a large pot. Stick cloves into onion and add to the pot. Bring to a boil; simmer, covered, until most of the liquid is absorbed, about 20 minutes. Uncover and cook until remaining liquid is reduced, about 5 minutes more.
