- 1 pound linguine
- 2 tablespoons extra-virgin olive oil
- 3 cloves garlic, peeled and thinly sliced
- 2 pounds coarsely shredded zucchini
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup shredded sharp Cheddar cheese
- 1/2 cup Classico® Light Creamy Alfredo pasta sauce
- Fresh basil, for garnish (optional)
- Cook pasta following package directions. Drain; keep warm. In large skillet, heat oil over medium-high heat. Add garlic; cook, stirring, about 30 seconds or until lightly browned.
- Increase heat to high. Stir in zucchini, salt and pepper. Cook, stirring often, about 3 minutes or until tender. Add cheese and Classico(R) Light Creamy Alfredo pasta sauce; heat through. Transfer to large bowl; toss with pasta. If desired, garnish with basil.
