Creamy Broccoli Rice Soup Recipe

  • 1 large onion, chopped
  • 1 medium carrot, peeled and chopped
  • 1 stalk celery, chopped
  • 1 clove garlic, chopped
  • 3 cups low-sodium chicken broth
  • 1/4 cup uncooked rice
  • 3 cups chopped broccoli
  • 2 cups fat free milk
  • 1 teaspoon dried thyme
  • Black pepper to taste
  1. In a soup pot, combine onion, carrot, celery, garlic and chicken broth, and bring to a boil.
  2. Add rice, cover and simmer for 20 minutes, or until rice is tender.
  3. Add broccoli, cover and simmer and cook until broccoli is tender, about 5 minutes.
  4. Using either an immersion blender or a regular blender, process until smooth. Return to saucepan. Add LACTAID(R) Fat Free Milk, thyme, and pepper, and heat slowly. Do not boil.
  5. Serve hot or cold.
