Creamed peas with garlic and coriander Recipe

  • 25g/1oz butter
  • ½ onion, chopped
  • 1 garlic clove, finely chopped
  • 85g/3oz fresh peas, out of their pods
  • 50ml/2fl oz white wine
  • 75ml/2½fl oz double cream
  • 1 tbsp chopped fresh chives
  • 1 tbsp chopped fresh coriander
  • salt and freshly ground black pepper
  1. Heat the butter in a frying pan and gently fry the onion and garlic for 4-5 minutes.
  2. Add the peas and stir well, then pour in the wine and simmer for 2-3 minutes. Stir in the cream and simmer for 3-4 minutes.
  3. Stir in the fresh herbs and season with salt and freshly ground black pepper.
  4. To serve, pour the soup into a serving bowl.
