- Salad:
- 2 1/2 cups cooked hulled barley
- 1 1/2 cups cooked wheat berries
- 1 1/4 cups sweetened dried cranberries (such as Craisins®), chopped
- 1 cup cooked brown rice
- 1 cup chopped raw pecans
- 3/4 cup cooked quinoa
- 1/3 cup raw sunflower seeds
- 1/3 cup chopped raw walnuts
- Dressing:
- 1/3 cup water
- 1/3 cup frozen orange juice concentrate
- 1/3 cup olive oil
- 1/3 cup maple syrup
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- Mix barley, wheat berries, cranberries, brown rice, pecans, quinoa, sunflower seeds, and walnuts together in a large bowl.
- Blend water, orange juice concentrate, olive oil, maple syrup, lemon juice, salt, black pepper, and thyme in a blender until smooth; pour over the salad and gently mix.
