Cranberry, Whole Grain, and Citrus Breakfast Salad Recipe

  • Salad:
  • 2 1/2 cups cooked hulled barley
  • 1 1/2 cups cooked wheat berries
  • 1 1/4 cups sweetened dried cranberries (such as Craisins®), chopped
  • 1 cup cooked brown rice
  • 1 cup chopped raw pecans
  • 3/4 cup cooked quinoa
  • 1/3 cup raw sunflower seeds
  • 1/3 cup chopped raw walnuts
  • Dressing:
  • 1/3 cup water
  • 1/3 cup frozen orange juice concentrate
  • 1/3 cup olive oil
  • 1/3 cup maple syrup
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  1. Mix barley, wheat berries, cranberries, brown rice, pecans, quinoa, sunflower seeds, and walnuts together in a large bowl.
  2. Blend water, orange juice concentrate, olive oil, maple syrup, lemon juice, salt, black pepper, and thyme in a blender until smooth; pour over the salad and gently mix.
