Cranberry-Oat Muffins Recipe

  • 1/2 cup chopped cranberries or blueberries
  • 1/4 cup maple syrup or agave nectar
  • 2 tablespoons unrefined vegetable oil
  • 3/4 cup Northland 100% Juice Traditional Cranberry Blend
  • 1 cup oat bran
  • 1 cup whole wheat pastry flour or spelt flour
  1. Preheat oven to 400 degrees F. Oil and flour large or mini muffin pans or use paper liners. (Smaller muffins rise better).
  2. Place berries, sweetener (maple syrup or agave nectar), oil, and cranberry juice in blender and blend slightly.
  3. Mix dry ingredients together. Add liquid to dry ingredients and stir just to combine. Fill oiled muffin tins.
  4. Bake at 400 degrees F for 20 to 25 minutes or until nicely browned.
