Crammed Chowder Recipe
- 1/2 cup onion, chopped
- 1/4 cup celery
- 4 garlic, minced
- 1 teaspoon curry powder
- 1 cup carrots, chopped
- 1/2 cup corn
- 1 (14 ounce) can tomatoes
- 2 (16 ounce) cans chicken broth
- 1/2 cup green peas
- 1/2 cup tofu
- 3 cups spinach
- Spray the bottom of a 4- to 6-quart pot with nonstick spray. Add the onions, celery, garlic and curry powder. Stir to mix, then cover and cook over medium heat for 5 minutes.
- Add carrots, corn, tomatoes and broth. Bring to a boil. Cover and reduce heat to low. Simmer for 20 minutes.
- Add peas, tofu, and spinach leaves. Stir and simmer 5 minutes.
