Crammed Chowder Recipe

  • 1/2 cup onion, chopped
  • 1/4 cup celery
  • 4 garlic, minced
  • 1 teaspoon curry powder
  • 1 cup carrots, chopped
  • 1/2 cup corn
  • 1 (14 ounce) can tomatoes
  • 2 (16 ounce) cans chicken broth
  • 1/2 cup green peas
  • 1/2 cup tofu
  • 3 cups spinach
  1. Spray the bottom of a 4- to 6-quart pot with nonstick spray. Add the onions, celery, garlic and curry powder. Stir to mix, then cover and cook over medium heat for 5 minutes.
  2. Add carrots, corn, tomatoes and broth. Bring to a boil. Cover and reduce heat to low. Simmer for 20 minutes.
  3. Add peas, tofu, and spinach leaves. Stir and simmer 5 minutes.
