Country Pork and Pierogie Dinner Recipe

  • 1 pound seasoned pork tenderloin
  • 1 tablespoon vegetable oil
  • 1 (10 ounce) package frozen peas
  • 1 (9 ounce) package frozen onions with cream sauce
  • 1 (12 ounce) package cheddar bacon mini pierogies
  1. Cut tenderloin into 1 thick medallions. Flatten each piece to thick.
  2. Heat 1 tablespoon of oil, in a large skillet, over med-high heat. Cook medallions for 6-8 minutes, turning occasionally, until meat reaches a temperature of 160 degrees F. Meanwhile, heat frozen onions with cream sauce and frozen peas as per directions on the container. Also prepare cheddar bacon mini pierogies as instructed on container.
  3. Place heated peas, onions with cream sauce and cooked pierogies together in a large bowl and mix gently to combine. Serve along side prepared tenderloin medallions.
