Cornmeal Muffins Recipe

  • 4 1/2 cups cornmeal
  • 4 cups all-purpose flour
  • 1 cup sugar
  • 1/4 cup baking powder
  • 4 teaspoons salt
  • 1 cup butter flavored shortening
  • ADDITIONAL INGREDIENTS:
  • 1 egg
  • 1 1/4 cups milk
  1. In a large bowl, combine the cornmeal, flour, sugar, baking powder and salt. Cut in shortening until crumbly. Store in an airtight container in a cool dry place for up to 6 months.
