Cornbread with Pancetta Recipe

  • 4 ounces sliced pancetta, chopped
  • 2 tablespoons butter
  • 3/4 cup stone-ground or regular yellow cornmeal
  • 3/4 cup all purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon coarse kosher salt
  • 3/4 cup sour cream
  • 1/4 cup milk
  • 1 large egg
  1. Combine the wet and dry ingredients, mixing to blend. Stir in pancetta-butter mixture. Pour into prepared pan and bake until browned, about 20 minutes. Serve warm.
