- 4 ounces sliced pancetta, chopped
- 2 tablespoons butter
- 3/4 cup stone-ground or regular yellow cornmeal
- 3/4 cup all purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon coarse kosher salt
- 3/4 cup sour cream
- 1/4 cup milk
- 1 large egg
- Combine the wet and dry ingredients, mixing to blend. Stir in pancetta-butter mixture. Pour into prepared pan and bake until browned, about 20 minutes. Serve warm.
