- 2 (8 ounce) packages dry corn bread mix
- 1 red onion, chopped
- 1 green bell pepper, chopped
- 1 tomato, chopped
- 4 cups mayonnaise
- Prepare cornbread according to the box instructions. Cool, crumble and place in a large bowl.
- Mix in red onion, bell pepper, tomato, and mayonnaise. Cover, and refrigerate for at least 18 hours.
