Corn Mexican-Style Recipe

  • 2 tablespoons Crisco® Butter Flavor All-Vegetable Shortening or Crisco® Pure Olive Oil
  • 3 cups fresh or frozen and thawed corn kernels
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1 teaspoon finely grated lime peel
  • 1/2 cup crumbled queso fresco
  1. Heat shortening in large skillet over medium heat. Add corn and stir-fry 2 minutes.
  2. Stir in paprika, salt, cayenne pepper and pepper. Remove from heat. Just before serving stir in cilantro, lime juice and lime peel. Top with cheese.
