Coq au Vin & Pasta Recipe

  • 4 large chicken thighs, trimmed of excess fat
  • 2 teaspoons rotisserie or herb chicken seasoning
  • 1 tablespoon margarine or butter
  • 3 cups halved or quartered mushrooms
  • 1 medium onion, coarsely chopped
  • 1/2 cup dry white wine or vermouth
  • 1 (4.9 ounce) package PASTA RONI® Homestyle Chicken Flavor
  • 1/2 cup sliced green onions
  1. Sprinkle meaty side of chicken with rotisserie seasoning. In large skillet over medium-high heat, melt margarine. Add chicken, seasoned-side down; cook 3 minutes. Reduce heat to medium-low; turn chicken over.
  2. Add mushrooms, onion and wine. Cover; simmer 15 to 18 minutes or until chicken is no longer pink inside. Remove chicken from skillet; set aside.
  3. In same skillet, bring 1 cup water to a boil. Stir in pasta, Special Seasonings and green onions. Place chicken over pasta. Reduce heat to medium-low. Cover; gently boil 6 to 8 minutes or until pasta is tender. Let stand 3 to 5 minutes before serving.
