Confetti Beans and Rice with Chicken Recipe

  • 1 cup Minute® Brown Rice, uncooked
  • 2 teaspoons Dijon mustard
  • 1/2 cup light Caesar salad dressing
  • 1 (15 ounce) can black beans, drained and rinsed
  • 12 ounces cooked chicken, diced
  • 1 (11 ounce) can Mexican-style corn, drained
  • 4 green onions, thinly sliced
  • 2 large tomatoes, halved and hollowed out
  1. Prepare rice according to package directions.
  2. Combine Dijon mustard and Caesar salad dressing in large bowl.
  3. Toss in rice, beans, chicken, corn and green onions. Fill tomatoes with mixture. Chill or serve at room temperature.
