- 1 cup Minute® Brown Rice, uncooked
- 2 teaspoons Dijon mustard
- 1/2 cup light Caesar salad dressing
- 1 (15 ounce) can black beans, drained and rinsed
- 12 ounces cooked chicken, diced
- 1 (11 ounce) can Mexican-style corn, drained
- 4 green onions, thinly sliced
- 2 large tomatoes, halved and hollowed out
- Prepare rice according to package directions.
- Combine Dijon mustard and Caesar salad dressing in large bowl.
- Toss in rice, beans, chicken, corn and green onions. Fill tomatoes with mixture. Chill or serve at room temperature.
