Cold Tomato and Cucumber Soup Recipe

  • 2 pounds tomatoes, cut in wedges
  • 1 large clove garlic
  • 1 large cucumber, peeled and chopped
  • 1 cup tomato juice
  • 1/2 cup fresh basil
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  1. In 2 batches in a food processor, process the tomatoes and garlic until smooth. Place in a bowl.
  2. Add the cucumber, tomato juice, basil, oil, vinegar, salt, and pepper to the bowl. Cover and chill for at least 3 hours, or until very cold and the flavors have blended.
